Most people in India meet avocado oil at the stove. But a cold-pressed oil is arguably at its best when it never gets heated at all. An avocado oil salad dressing keeps the Vitamin E, chlorophyll and oleic acid intact, because nothing above 49°C ever touches the oil.

Why does avocado oil work better raw than most oils?
Because cold-pressed extra virgin avocado oil is mild. It carries roughly 70% oleic acid (Omega-9) and a faint buttery note, not the grassy bitterness of a strong extra virgin olive oil or the sharp pungency of mustard oil.
That matters for raw use. A dressing made with a loud oil tastes of the oil. A dressing made with avocado oil tastes of the lemon, the pudina, the kala namak.
It also emulsifies well. Whisked with curd or mustard paste, it holds together for 20-30 minutes without splitting — long enough to serve a salad at a dinner.

12 no-cook ways to use avocado oil
1. Lemon-pudina everyday dressing
3 tbsp avocado oil, 1 tbsp lime juice, 10-12 pudina leaves crushed, ¼ tsp kala namak, pinch of sugar. Whisk 30 seconds. Dresses a salad for four.
2. Chaat drizzle
Finish bhel, sev puri or aloo chaat with ½ tsp of oil per plate just before serving. It stops the sev going limp and carries the chutney flavour further. This is where a fine mist earns its place over a pour.
3. Curd-based raita emulsion
Whisk 1 tsp oil into 200g beaten dahi before adding cucumber or boondi. The raita turns glossy and stops weeping water in the bowl.
4. Green chutney that stays green
Add 1 tbsp oil to coriander-mint chutney while grinding. The oil coats the leaves and slows oxidation, so the chutney holds its colour in the fridge for 2-3 days instead of browning overnight.
5. Sprout and moong salad
2 tbsp oil, juice of half a lemon, chopped green chilli, ½ tsp roasted jeera powder over 2 cups of boiled sprouts. The oil makes the fat-soluble vitamins in the salad actually absorbable.
6. Hummus and dip finishing

7. Smoothie fat
1 tsp into a banana or mango smoothie. Tasteless, and it slows the sugar spike from the fruit. Useful if you drink smoothies on an empty stomach.
8. Avocado toast, properly
Mash half an avocado with 1 tsp avocado oil, lemon, salt and chilli flakes. The oil loosens the mash so it spreads without tearing the bread.
9. Dahi-mustard dressing for raw salads
1 tbsp oil, 1 tsp kasundi or English mustard, 2 tbsp dahi, salt. Toss through shredded cabbage and carrot for a coleslaw that is not mayonnaise.
10. Soup and dal finishing
Off the heat, ½ tsp per bowl over dal, rasam or a tomato shorba. Added after cooking, the oil's nutrients survive and the dal gets a richer mouthfeel without ghee.
11. Overnight oats and curd bowls
1 tsp into 50g oats with milk or curd. Adds about 5g of fat per serving, which keeps breakfast filling until lunch.
12. Infused oil for the table

How much raw oil should you actually use?
One to two tablespoons a day across meals is a reasonable ceiling for most adults. That is 124-248 kcal of fat.

Does raw avocado oil taste of avocado?
No. This is the most common surprise for first-time buyers.
Cold-pressed Hass oil from Michoacán tastes faintly buttery and slightly nutty, closer to a very mild butter than to guacamole. The green colour comes from chlorophyll, not from flavour.
That neutrality is why it disappears into a dahi-based dressing in a way olive oil never does.

Can I use avocado oil straight from the bottle on salads?
Yes. Cold-pressed extra virgin avocado oil needs no heating or processing before use. Pour, whisk, serve.
Is refined avocado oil fine for dressings?
It works, but refining removes much of the Vitamin E and the chlorophyll. For raw use, cold-pressed is the better buy. The difference is laid out in refined vs extra virgin avocado oil.
Will it solidify in the fridge?
It thickens and may turn cloudy below about 5°C, then clears at room temperature. Unlike coconut oil it does not set hard, so a fridge-stored dressing still pours.
How long does a homemade dressing keep?
Three to four days refrigerated for oil-and-lemon dressings. Anything with dahi or fresh coriander, use within 48 hours.
Is a teaspoon of raw oil a day actually useful?
Research suggests monounsaturated fat eaten alongside vegetables improves absorption of the fat-soluble vitamins A, D, E and K. A teaspoon with a salad is a sensible way to get that, though it is not a substitute for overall diet quality.
Can children have raw avocado oil?
